Tonight for dinner I made Honey-Lime Chicken with green beans and rice. It was a new recipe I was trying out for the first time and it turned out quite nicely! Wasn't super fancy or extravagant but very easy to make and tasted delicious. Everything in it is stuff I always have on hand besides the limes but they were a really nice flavor addition so maybe I will have to start buying them more often!
Recipe:
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
juice of one lime
2 garlic cloves, minced
1-2 teaspoon Siracha
red pepper flakes, to taste
1 pound skinless, boneless chicken breasts
Mix up all the ingredients in one big bowl and then add the cut up chicken to marinade for awhile(I let it all sit for about 30 minutes) then just throw the chicken on a griddle or grill and cook til they're all done. Meanwhile make the rice, steam some green beans in water and salt and bring the left over marinade to a boil to kill any bacteria the raw chicken may have left behind so that you can now use the marinade as a sauce over the whole meal.
This was a great simple, low prep meal that we both really enjoyed. Sorry about the terrible picture below-I was using my phone camera tonight and the top two turned out alright but this last one is pretty awful! ;)
